Looking for a fast breakfast idea? Heaven knows that on mornings when hubby is still at work (having worked the night shift) and I have to be at work across town we are really in a rush. It is nice to know I have a secret weapon in my back pocket when it comes to breakfast. Breakfast Parfaits are such easy go-to breakfasts at our house. I layer yogurt, fruit, granola in a glass. I get no fuss from either boy when I offer to make them breakfast parfaits.
We have made countless combinations over the years and my boys still don’t tire of it. I like knowing that if cereal or toast are not in the cards on any given day I can make this winner. Both boys will eat it with no complaints and I feel good knowing they are eating several food groups.
I like to use fruit flavoured yogurt as the first layer and then chopped fruit and then granola. Repeat once or twice depending on your appetite! You can use fresh or frozen fruit, plain, Greek or fruit flavoured yogurt and if your kiddos don’t like granola you can layer in their favourite cereal instead. The object is to create a quick breakfast that makes your morning go smoothly AND that your family will enjoy eating!
These are so quick to make that by the time the boys drag themselves to the table I can have them almost all the way assembled. Bonus-Once my boys are a wee bit bigger I think I can even get them to do the assembly!
