Have I mentioned how much I LOVE LOVE LOVE packing school lunches? I have been trying to find some nut free snacks I could make for my son that will help fill his tummy and keep him going throughout the day. I have been seeing lately some great granola ball or energy bite recipes so I figured I would tweak them to meet the strict no nut policy at our school and also suit my sons taste. I also new I wanted it to be a recipe I could make easily and quickly.
Here is the recipe we came up with for us and guess what-it is completely up to you what you add in to it! This easy recipe is simple to customize for your family. So easy to make!!
Nut Free Granola Balls
1 cup store bought or homemade granola WITH NO NUTS
1 cup add ins (see idea list below)
1/4 cup Wow Butter-keep the jar out, you may need to add a little extra if balls don’t stick together (sounds dirty)
2 tablespoons local honey
Ad-Ins Ideas-Any combo of these totalling 1 cup can be added in.
Dried cranberries, raisins or any other dried fruit
Anything your little one or you like!
Pop all ingredients into food processor and pulse just until the mixture will roll into a ball without falling apart. I measured mine to about a heaping table spoon size and then rolled into balls.
Chilling mixture in fridge for 20 minutes can help it stick together better if it has gotten too warm to roll into balls.
You may need add another tablespoon of Wow Butter if it is too crumbly.
Do not over process! You want texture!
Cool on a cookie sheet to ‘harden’ or ‘set’ them. I popped the cookie sheet in the freezer for an hour and then packaged them in a freezer bag. I grab 2 or 3 out at a time out of the freezer and add to my sons lunch.
